If packaged properly, most pastry is freezable including cakes(iced or uniced). Place your pastry in freezable bags, or containers before placing it in the freezer. Remember, too, not to stick it in the side door or close to the top or front of the freezer. When warm air hits it, the pastry can detiorate.
After removing your pastry from the freezer, it is best to keep it sealed within the container until it comes to room temperature.
The sun, dry air and heat can damage your pastry within hours if not properly covered. Keep pastry like cookies covered with plastic wrap until ready to serve and don't cut your cake until you are ready to eat it to prevent them from drying out.
